Cupcakes:
1 ½ cups all-purpose flour
1 ½ tsp baking powder
½ tsp cinnamon
¼ tsp salt
½ cup unsalted butter, room temp
¾ cup sugar
2 eggs
1 tsp vanilla extract
½ cup milk
Apple Filling:
2 medium apples, peeled & diced
2 tbsp butter
¼ cup brown sugar
1 tsp cinnamon
1 tsp lemon juice
Frosting:
½ cup butter, room temp
2 cups powdered sugar
1 tsp cinnamon
1 tsp vanilla
2–3 tbsp milk
Preheat oven to 350°F. Line muffin tin.
Cream butter and sugar. Add eggs and vanilla. Mix in dry ingredients alternately with milk.
Spoon batter into liners, bake 18–20 mins. Cool completely.
Cook apples, butter, sugar, cinnamon, and lemon juice until soft. Let cool.
Core cupcakes and fill with apple mixture.
Beat frosting ingredients until fluffy. Frost cupcakes.
