  • 2 ripe avocados, diced
  • 2 cups sweet corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • Optional: pico de gallo or diced jalapeños for a spicy version

Instructions

  1. Prep your ingredients by gathering all items on the counter.
  2. Prepare the corn by slicing kernels off the cob or thawing/draining frozen or canned corn.
  3. Combine the diced avocados, sweet corn, red bell pepper, and red onion in a large mixing bowl.
  4. Add the flavor by squeezing lime juice, then sprinkle with salt and pepper.
  5. Herb it up by tossing in cilantro nicely.
  6. Chill the salad in the fridge for about 30 minutes if time allows before serving.
