Bacon Pasta Salad

A comforting classic pasta salad featuring crispy bacon, fresh peas, and a creamy dressing, perfect for any occasion.

  • 8 ounces pasta (rotini or penne)
  • 6 slices bacon
  • 1 cup peas (fresh or frozen)
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Crispy Bacon Magic: In a large skillet, cook bacon over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate and crumble.
  3. Combine the cooled pasta, crumbled bacon, and peas in a large bowl.
  4. Whisk together mayonnaise, apple cider vinegar, Dijon mustard, and seasonings in a separate bowl. Pour over pasta mixture and toss gently.
  5. Add grated parmesan and stir well. Cover and refrigerate for at least 30 minutes before serving.
  6. Serve chilled, garnished with extra parmesan and fresh herbs.

Notes

For a lighter option, substitute turkey bacon or use Greek yogurt instead of half the mayonnaise. This salad tastes even better after sitting in the fridge for a few hours or overnight.
