Bacon, Potato & Egg Casserole

This casserole is the kind of breakfast that brings everyone to the table—no alarm clock needed. I first made it for a holiday morning, and it quickly became a year-round favorite. With crispy bacon, tender potatoes, and fluffy eggs baked together under a layer of melty cheese, it’s everything you love about breakfast in one dish. Whether it’s a weekend brunch or a family gathering, this casserole makes mornings feel extra special.

6 slices bacon, cooked and crumbled

3 cups frozen diced potatoes (or freshly cooked)

8 large eggs

1 cup milk

1½ cups shredded cheddar cheese

½ cup chopped green onions or chives

Salt and pepper to taste

Optional: diced bell peppers, hot sauce, or herbs

Instructions

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Spread potatoes evenly in the dish. Top with bacon and half the cheese.

In a bowl, whisk eggs, milk, salt, and pepper. Stir in green onions and any extras.

Pour egg mixture over potatoes. Top with remaining cheese.

Bake for 35–40 minutes, or until eggs are set and top is golden.

Let sit for 5 minutes before slicing and serving.
