Baked Feta Eggs with Tomatoes and Spinach

A delightful breakfast dish featuring creamy feta, tomatoes, and fresh spinach baked with eggs, perfect for a cozy morning or brunch.

  • 4 large eggs
  • 200g feta cheese
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnishing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your baking dish by drizzling 1 tablespoon of olive oil across the bottom.
  3. Layer the cherry tomatoes in an even layer across the bottom of the baking dish.
  4. Add the fresh spinach on top of the tomatoes.
  5. Crumble the feta cheese over the spinach.
  6. Crack the eggs gently over the feta.
  7. Season with salt and fresh cracked pepper.
  8. Drizzle remaining olive oil over everything.
  9. Bake for 20-25 minutes until egg whites are set but yolks are still jiggly.
  10. Garnish with fresh herbs before serving.

Notes

For extra flavor, try adding red pepper flakes or mixing in vegetables like bell peppers or zucchini.
