Baked Feta Pasta

A creamy and dreamy pasta dish featuring baked feta cheese and roasted cherry tomatoes, perfect for a comforting meal.

  • 8 ounces cavatappi pasta (or pasta of your choice)
  • 2 pints cherry tomatoes
  • 8-ounce block feta cheese
  • ½ cup extra virgin olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 garlic cloves, minced
  • ¼ cup fresh basil, chopped (plus more for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a large, oven-safe dish — drizzle about half of your olive oil into the dish.
  3. Arrange the cherry tomatoes in the dish, ensuring they are well distributed. Season with salt and pepper.
  4. Add the block of feta cheese in the center of the tomatoes and drizzle the remaining olive oil on top.
  5. Spread the minced garlic over the feta and tomatoes.
  6. Roast in the oven for about 30 minutes, until tomatoes are bursting and feta is golden.
  7. Cook your pasta in salted boiling water until al dente, saving about half a cup of pasta water before draining.
  8. Combine the roasted tomatoes and feta in the baking dish, stirring gently to mix.
  9. Incorporate the drained pasta into the baking dish, adding reserved pasta water to achieve creaminess.
  10. Garnish with chopped fresh basil before serving.

Notes

Feel free to enhance your presentation with freshly cracked black pepper or a drizzle of good olive oil. This dish pairs well with a side salad or crusty bread.
