Banana Oatmeal Muffins

Easy and nourishing banana oatmeal muffins made with ripe bananas and rolled oats, perfect for breakfast or as an afternoon snack.

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup milk or a dairy-free alternative
  • 1/4 cup maple syrup (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 teaspoon vanilla extract (optional)
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by greasing it lightly or lining it with muffin liners.
  3. Mash the ripe bananas in a medium bowl until smooth.
  4. Mix the wet ingredients (milk, maple syrup, and vanilla extract) with the mashed bananas.
  5. Combine the rolled oats, baking powder, baking soda, and cinnamon in a separate bowl.
  6. Bring the wet and dry ingredients together, folding until just combined.
  7. Add in your chocolate chips or blueberries and mix gently.
  8. Fill the muffin tin with the batter, filling each cup about 3/4 full.
  9. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  10. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

These muffins are perfect for breakfast on-the-go. Serve them warm with butter or nut butter for extra flavor.
