Bang Bang Chicken Bowl

A vibrant Bang Bang Chicken Bowl featuring juicy chicken, colorful veggies, and a creamy, spicy sauce over a fluffy bed of rice.

  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 3 green onions, chopped
  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 2 tablespoons oil (for cooking)
  • Sesame seeds (for garnishing)

Instructions

  1. Prep your chicken by cutting the breasts into bite-sized pieces. Season with a pinch of salt and pepper.
  2. Heat the oil in a large skillet or wok over medium-high heat.
  3. Cook the seasoned chicken for about 5-7 minutes, until golden brown and cooked through.
  4. Add the broccoli, sliced red bell pepper, and julienned carrot, stir-frying for another 5 minutes.
  5. Mix together the mayonnaise, sweet chili sauce, Sriracha, and soy sauce in a small bowl until smooth.
  6. Combine the sauce with the chicken and vegetables, stirring well and letting it simmer for a few minutes.
  7. Serve the mixture over a generous amount of cooked rice in bowls.
  8. Garnish with chopped green onions and sesame seeds before enjoying!

Notes

For a vegetarian twist, substitute chicken with tofu. Add lime wedges for extra flavor.
