Flavor-packed Bang Bang Salmon Bites are crispy, delicious, and served with an irresistible creamy sauce, perfect for weeknight dinners or gatherings.

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the salmon by cutting it into bite-sized cubes and seasoning with salt and pepper.
  3. Season the salmon with garlic powder, smoked paprika, salt, and black pepper.
  4. Bread the salmon cubes by rolling them in panko breadcrumbs.
  5. Arrange the breaded cubes on a baking sheet lined with parchment paper.
  6. Add olive oil to the breadcrumbs on the salmon bites.
  7. Bake for about 12-15 minutes, until golden brown.
  8. Prepare the sauce by mixing mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.
  9. Cook the rice according to package instructions.
  10. Plate the dish by layering jasmine rice, purple cabbage, carrots, and salmon bites topped with sauce, avocado, green onions, cilantro, and sesame seeds.
