Beef and Broccoli

A comforting dish that combines tender beef and vibrant broccoli in a savory sauce, perfect for a joyful home-cooked meal.

  • 1 pound flank steak
  • 4 tablespoons olive oil (or vegetable oil)
  • 12 ounces broccoli florets
  • Sesame seeds and green onions for garnish (optional)
  • Rice or whole-grain spaghetti for serving
  • 2 teaspoons fresh ginger (grated)
  • 4 cloves garlic (freshly minced or grated)
  • 1/2 cup chicken stock
  • 6 tablespoons low sodium soy sauce
  • 3 tablespoons brown sugar (or honey)
  • 2 tablespoons sesame oil (toasted sesame oil is ideal)
  • 12 teaspoons sriracha or similar hot sauce
  • 1/21 tablespoon cornstarch

Instructions

  1. Prepare the Beef: Thinly slice the flank steak against the grain into strips, about 1/4 inch thick.
  2. Make the Marinade: In a bowl, combine the thinly sliced beef with 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, and a drizzle of oil. Let it marinate while you prepare the rest of the ingredients.
  3. Prepare the Sauce: In a separate bowl, whisk together the chicken stock, remaining soy sauce, brown sugar, ginger, garlic, sesame oil, and sriracha. Taste and adjust the spice level.
  4. Heat the Pan: Heat a large skillet or wok over medium-high heat and add 2 tablespoons of olive oil.
  5. Cook the Beef: Add the marinated beef to the hot skillet in a single layer. Sear for about 1-2 minutes until browned, then toss to cook the other side.
  6. Add the Broccoli: Toss in the broccoli florets and stir-fry them with the beef for another 2-3 minutes.
  7. Add the Sauce: Pour the sauce over the beef and broccoli, stirring in extra cornstarch if you want a thicker sauce. Let it simmer briefly until thickened.
  8. Taste and Adjust: Adjust with soy sauce, sriracha, or seasoning as needed.
  9. Serve It Up: Serve hot over rice or spaghetti, garnished with sesame seeds and chopped green onions.

Notes

This dish can be made vegetarian by swapping beef for tempeh or tofu and using vegetable stock.
