Beef and Broccoli Stir-Fry Noodles

  • 8 oz udon or chow mein noodles
  • 1 lb beef (sliced thinly)
  • 2 cups broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 2 green onions (sliced)
  • Salt and pepper to taste

Instructions

  1. Cook the noodles: Boil a large pot of water. Add in the noodles and cook according to package instructions (6-8 minutes for udon). Drain and rinse under cold water. Drizzle with sesame oil to prevent sticking.
  2. Prepare the beef: Slice the beef against the grain and marinate with soy sauce, sesame oil, and black pepper if time allows.
  3. Sauté the aromatics: Heat sesame oil in a wok, add garlic and ginger, and sauté for about 30 seconds.
  4. Stir-fry the beef: Add the beef in a single layer, sear for 2-3 minutes, then stir-fry until cooked through.
  5. Add the broccoli: Toss in broccoli florets, add a splash of water, and stir-fry for 2-3 minutes until bright and slightly tender.
  6. Combine noodles and sauces: Add the cooked noodles, soy sauce, oyster sauce, salt, and pepper, and toss everything for another 2 minutes.
  7. Finish with green onions: Stir in sliced green onions, then remove from heat.
