Deliciously Simple Beef Lo Mein

  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil (for marinating)
  • 8 ounces (225g) Lo Mein noodles (or spaghetti as a substitute)
  • 2 tablespoons vegetable oil (for cooking)
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1 cup snap peas or snow peas
  • 4 green onions, cut into 2-inch pieces
  • 1/4 cup soy sauce, for the sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/4 cup beef broth or water

Instructions

  1. Marinate the Beef: In a medium bowl, combine the thinly sliced beef with soy sauce, cornstarch, and vegetable oil. Let it sit for 15-20 minutes.
  2. Cook the Noodles: Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions. Drain and rinse under cold water.
  3. Stir-Fry the Beef: Heat vegetable oil in a large skillet or wok over high heat. Sear marinated beef for 1-2 minutes until browned, then set aside.
  4. Sauté the Aromatics: In the same skillet, add minced garlic and ginger, stirring until fragrant. Add bell pepper, shredded carrots, and peas, and stir-fry for 3-4 minutes.
  5. Combine and Toss: Return beef to the skillet, add the cooked noodles, remaining soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and beef broth. Toss to combine and cook for 2-3 minutes.
  6. Serve and Enjoy: Stir in green onions and serve hot, offering extra soy sauce on the side.

Notes

For a vegetarian option, swap the beef for tofu or tempeh. Don’t hesitate to experiment with vegetables and sauces to suit your taste.
