  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 medium red bell pepper, julienned
  • 1 medium carrot, julienned
  • 100g snow peas, trimmed
  • 2 green onions, chopped
  • 1 teaspoon cornstarch
  • 2 tablespoons neutral oil (canola or vegetable)
  • 2 tablespoons water (for sauce)

Instructions

  1. Marinate the beef: In a bowl, combine the thinly sliced beef with light soy sauce, dark soy sauce, and cornstarch. Let it marinate for about 15 minutes.
  2. Boil the noodles: In a large pot, bring water to a boil and cook the lo mein noodles according to package instructions.
  3. Prepare your veggies: Julienne the red bell pepper and carrot, and trim the snow peas. Mince the garlic and ginger.
  4. Heat the wok: In a large wok or pan, heat 1 tablespoon of neutral oil over medium-high heat. Add the marinated beef and stir-fry for about 2-3 minutes until browned. Remove and set aside.
  5. Stir-fry the veggies: In the same pan, add more oil if necessary and toss in the garlic and ginger. Then add the bell peppers, carrots, and snow peas. Stir-fry for 2-3 minutes.
  6. Combine everything: Return the beef to the pan, add the oyster sauce and sesame oil, and stir to meld the flavors. Add reserved noodle water if needed.
  7. Mix in the noodles: Toss the lo mein noodles into the pan, mixing everything until warm and well-coated.
  8. Garnish and serve: Finish with a sprinkle of chopped green onions before serving.
