The Best Chicken Noodle Soup

A cozy and comforting Chicken Noodle Soup that warms the heart and fills the kitchen with delightful aromas.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Toss in your chopped onion along with a pinch of salt and sauté for about 5 minutes until translucent.
  3. Add the sliced carrots and celery, stirring for another 5-7 minutes until they soften.
  4. Stir in the minced garlic and cook for about a minute until fragrant.
  5. Pour in the chicken broth, scraping up any stuck bits at the bottom.
  6. Toss in the shredded chicken, dried thyme, and bay leaf. Reduce to a simmer for roughly 20 minutes.
  7. Add the egg noodles and cook according to package instructions, about 6-8 minutes.
  8. Taste your soup and adjust seasoning with salt and pepper.
  9. Stir in chopped fresh parsley just before serving.
  10. Serve and enjoy!
