Big Fat Peanut Butter Oatmeal Chocolate Chip Cookies

½ cup unsalted butter, softened

½ cup creamy peanut butter

½ cup granulated sugar

½ cup packed brown sugar

1 large egg

1 tsp vanilla extract

1 cup all-purpose flour

1 tsp baking soda

¼ tsp salt

1 cup rolled oats

1 cup semisweet chocolate chips

Instructions

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Cream butter, peanut butter, and both sugars until smooth.

Beat in egg and vanilla.

In another bowl, whisk flour, baking soda, and salt. Gradually add to wet ingredients.

Stir in oats and chocolate chips.

Scoop large spoonfuls of dough onto the baking sheet, spacing 2 inches apart.

Bake for 10–12 minutes, until edges are golden and centers are soft.

Cool on sheet for 5 minutes, then transfer to a wire rack.
