Breakfast Sweet Potatoes

A hearty and nostalgic breakfast dish with sweet potatoes, bacon, eggs, and cheese, perfect for lazy brunches or busy weekdays.

  • 4 slices of bacon
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Peel and chop the sweet potatoes into bite-sized cubes. Preheat your oven to 425°F (220°C).
  2. Spread the sweet potatoes onto a baking sheet, drizzle with olive oil, and sprinkle salt and pepper.
  3. Roast for about 25-30 minutes, flipping halfway through.
  4. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes.
  5. Whisk the eggs in a bowl, and scramble them in the same skillet with the bacon grease until slightly runny.
  6. Assemble the dish by adding the roasted sweet potatoes to a serving platter, topping with scrambled eggs and bacon, then adding shredded cheese on top and returning to the oven for 5 minutes.
  7. Garnish with green onions before serving.

Notes

Feel free to substitute ingredients based on dietary preferences, such as turkey bacon or tofu for a vegetarian version.
