2 cups cooked chicken, shredded or chopped
1 cup uncooked white rice
2 ½ cups low-sodium chicken broth
1 ½ cups milk
2 cups chopped broccoli (fresh or frozen)
1 small onion, diced
2 cloves garlic, minced
2 tbsp olive oil or butter
1 tsp salt
½ tsp black pepper
1 tsp paprika (optional)
2 cups shredded sharp cheddar cheese (divided)
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
In a skillet, sauté onion and garlic in olive oil until softened.
In the baking dish, stir together uncooked rice, sautéed onions, broth, milk, salt, pepper, paprika, and 1 cup cheddar.
