Magical Creamy Broccoli Cheddar Soup

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup milk or cream (optional)
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: Heat olive oil in a large pot over medium heat, add onion, and cook until translucent. Add garlic during the last minute.
  2. Add the broccoli: Toss in broccoli florets, stirring for 2-3 minutes.
  3. Pour in the broth: Stir in vegetable broth, bring to a boil, then reduce to a simmer for 10-15 minutes.
  4. Blend it up: Turn off heat and blend the soup until smooth using an immersion blender.
  5. Add cheese and cream: Stir in cheese and cream, allowing it to melt. Adjust seasoning.
  6. Taste test: Check seasoning and add more broth if desired consistency is needed.
