1 small onion, chopped
2 garlic cloves, minced
¼ cup all-purpose flour
2 cups milk
2 cups vegetable or chicken broth
3 cups chopped broccoli florets
1 medium carrot, grated or finely chopped
1 tsp salt (adjust to taste)
½ tsp black pepper
¼ tsp ground mustard (optional, for tang)
2 cups shredded sharp cheddar cheese

In a large pot, melt butter over medium heat. Sauté onion until soft, about 4–5 minutes. Add garlic and cook for 1 minute more.
