Butterscotch Bliss Crunch Cake

A delightful cake that combines warm butterscotch flavors with a crunchy nut topping, perfect for any occasion.

  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter (softened)
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup butterscotch chips
  • ½ cup chopped pecans or walnuts
  • 1 cup unsalted butter (softened, for frosting)
  • 3 cups powdered sugar
  • 1 cup butterscotch sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare two 9-inch round cake pans by greasing and flouring them.
  3. Mix the flour, baking powder, baking soda, and salt in a large bowl.
  4. Cream the butter and sugar together until light and fluffy.
  5. Add the eggs one at a time, mixing well after each, and then stir in the vanilla.
  6. Combine the dry ingredients with the butter mixture, alternating with the buttermilk.
  7. Fold in the butterscotch chips and nuts.
  8. Divide the batter between the prepared pans and bake for 25-30 minutes.
  9. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack.
  10. Make the frosting by beating the butter until creamy, then adding powdered sugar and butterscotch sauce.
  11. Frost the cake layers once cool and serve.
  12. Garnish with extra butterscotch sauce and nuts if desired.

Notes

For a fun twist, substitute chocolate chips for half of the butterscotch chips. You can also make this cake ahead of time.
