Cheesy Beef Taco Potato Bowls

  • 2 large potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup corn
  • 1 cup black beans
  • 1 cup diced tomatoes
  • Sour cream (for serving)
  • Chopped green onions (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and scrub the potatoes under cold water.
  2. Wrap the potatoes in aluminum foil and place them on a baking sheet. Bake for 45-60 minutes, or until tender.
  3. Add the ground beef to a skillet over medium heat, breaking it up, and cook until browned (about 5-7 minutes).
  4. Stir in the taco seasoning with a splash of water and simmer for 5-10 minutes.
  5. Mix in the corn and black beans, stirring and cooking for an additional 2-3 minutes.
  6. Cut a slit in the baked potatoes and fluff the insides with a fork.
  7. Spoon the beef mixture over the potatoes and top with shredded cheese.
  8. Return to the oven for 5-10 minutes until the cheese is melty.
  9. Top with diced tomatoes, sour cream, and green onions before serving.
