Cheesy Loaded Potato Bites : Crispy, Creamy & Game Day Ready

These Cheesy Loaded Potato Bites are the MVP of Super Bowl snacks—golden, bite-sized, and packed with everything you love about a loaded baked potato. Crispy edges, melty cheddar, creamy sour cream, and smoky turkey bacon come together in one seriously addictive appetizer. They’re easy to prep, fun to eat, and guaranteed to disappear fast.

6 large potatoes

4 tbsp olive oil

2 tsp garlic powder

1 tsp smoked paprika (or regular)

Salt & black pepper, to taste

2 cups shredded cheddar cheese

1 cup sour cream

6 green onions, thinly sliced

8 slices turkey bacon, cooked & crumbled (or sub regular bacon or plant-based)

Optional twist: Add a sprinkle of crushed red pepper for heat, a dollop of ranch or chipotle mayo in place of sour cream, or finish with jalapeño slices for extra kick

Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Scrub potatoes and cut into ½-inch thick rounds. Toss with olive oil, garlic powder, paprika, salt, and pepper.

Arrange slices in a single layer on the baking sheet. Bake for 20–25 minutes, flipping halfway, until golden and crispy.

Remove from oven and sprinkle with cheddar cheese. Return to oven for 3–5 minutes, until melted and bubbly.

Top each bite with a small spoonful of sour cream, crumbled turkey bacon, and a sprinkle of green onions.

Serve warm with toothpicks or on a party tray.
