These Chicken Caesar Tacos are a fresh, protein-rich spin on your favorite salad—wrapped up in cassava tortillas for a fun, handheld meal. With crispy chickpeas, juicy grilled chicken, and a creamy homemade Greek yogurt Caesar dressing, they’re bold in flavor and nourishing in every bite. Perfect for lunch, dinner, or meal prep.
2 cassava flour tortillas (or any tortilla of choice)
1 grilled chicken breast, sliced
1 cup chopped kale
⅓ cup crispy roasted chickpeas
For the Caesar dressing:
2 tbsp plain Greek yogurt
1 tsp Dijon mustard
Juice of ½ lemon
1 tbsp grated Parmesan
¼–½ tsp apple cider vinegar
¼ tsp garlic powder
Salt and pepper to taste
In a small bowl, whisk together all Caesar dressing ingredients until smooth. Adjust seasoning to taste.
In a larger bowl, toss chopped kale with the dressing to coat well. Let it sit for 5 minutes to soften.
Warm tortillas in a pan or microwave.
Fill each tortilla with the kale Caesar mix, top with crispy chickpeas and sliced grilled chicken.
