Homemade Chicken Curry

A warm and comforting chicken curry that encapsulates the vibrant flavors of Indian cuisine.

  • 1.5 lbs Boneless Chicken Thighs
  • 1 Medium Onion, Finely Chopped
  • 4 Cloves Garlic, Minced
  • 1 Tbsp Fresh Ginger, Grated
  • 2 Tbsp Curry Powder
  • 1 Can (14 oz) Diced Tomatoes
  • 1 Can (13.5 oz) Full-Fat Coconut Milk
  • Salt and Pepper to Taste
  • Fresh Cilantro for Garnish

Instructions

  1. Start by heating a splash of oil in a large, heavy-bottomed pot over medium heat. Once hot, toss in the finely chopped onion and sauté for about 3-5 minutes until it becomes wonderfully translucent.
  2. Add in the minced garlic and grated ginger. Sauté for another minute until fragrant.
  3. Sprinkle in the curry powder and stir it in, letting the spices bloom in the oil for about 30 seconds.
  4. Add the chicken thighs to the pot, season with salt and pepper, and stir to coat.
  5. Pour in the can of diced tomatoes with their juices and stir everything together. Let this mixture simmer for about 5 minutes.
  6. Pour in the coconut milk slowly, stirring well, and bring the mix to a gentle simmer. Let it cook on low heat for about 20-25 minutes.
  7. Taste the curry and adjust salt and pepper as needed. Serve with fresh cilantro on top.

Notes

This curry can be adjusted with vegetables or different proteins, and leftovers freeze well.
