Chicken Salad Stuffed Avocados

A delightful twist on a classic dish, combining creamy avocados with savory chicken salad, perfect for summer picnics or light dinners.

  • 1 whole rotisserie chicken
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 2 tbsp minced fresh parsley
  • 3/4 cup mayo
  • 1/4 cup sour cream
  • 2 tbsp fresh squeezed lime juice
  • Salt & fresh cracked black pepper to taste
  • 5 ripe avocados
  • 1 lime – juice only
  • Salt, paprika & chili powder for seasoning

Instructions

  1. Shred the chicken by removing the skin and bones and shredding it into bite-sized pieces.
  2. Mix the salad by combining the shredded chicken, diced red onion, diced celery, minced parsley, mayo, sour cream, lime juice, salt, and pepper in a large mixing bowl.
  3. Prepare the avocados by slicing them in half lengthwise and removing the pit.
  4. Mix additional lime juice, salt, paprika, and chili powder in a small bowl, then brush over cut sides of the avocados.
  5. Stuff each avocado half generously with the chicken salad.
  6. Chill in the refrigerator for about 15-30 minutes before serving.

Notes

Serve with extra lime juice or lime wedges, and pair with crispy tortilla chips or a light green salad.
