Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 ripe avocado, diced

½ cup cherry tomatoes, halved

¼ cup red onion, finely chopped

¼ cup cucumber, diced

2 tbsp fresh parsley or cilantro, chopped

Juice of 1 lemon

1 tbsp olive oil

Salt and black pepper to taste

Instructions

In a large bowl, combine chickpeas, avocado, tomatoes, onion, cucumber, and herbs.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
