  • 2 cups cooked brown rice
  • 2 cups cooked chicken, shredded or diced
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup chopped fresh cilantro
  • Lime wedges
  • Chipotle sauce or seasoning to taste
  • Salt and pepper to taste

Instructions

  1. Cook Your Brown Rice: Rinse 1 cup of brown rice under cold water and then use 2 cups of water. Bring it to a boil, cover, and simmer for about 30-35 minutes.
  2. Prepare Your Chicken: Shred or dice your cooked chicken, or season and cook raw chicken until fully cooked.
  3. Heat Your Beans: Combine black beans and half of the diced tomatoes in a saucepan over medium heat. Season and stir until warmed through.
  4. Sauté the Corn (Optional): Sauté corn in olive oil over medium-high heat for about 5 minutes until charred.
  5. Assemble the Bowls: Start with a scoop of brown rice and layer on the chicken, black beans, corn, and tomatoes.
  6. Add All The Finishing Touches: Top with avocado, cheese, cilantro, and serve with lime and chipotle sauce.
