Christmas Grinch Cupcakes

Bright, bold, and full of holiday mischief, these Christmas Grinch Cupcakes bring a little green cheer to your dessert table. With fluffy green cake, a swirl of sweet red heart-topped frosting, and just the right amount of sass, they’re the perfect treat for parties, school events, or a Grinch movie night.

For the Cupcakes

1 box white cake mix

3 large eggs

1/2 cup vegetable oil

1 cup water

Green gel food coloring

1/2 tsp mint or vanilla extract (optional twist)

For the Frosting

1 cup unsalted butter, softened

3 1/2 cups powdered sugar

12 tbsp heavy cream or milk

1 tsp vanilla extract

Red gel food coloring

Toppings & Decoration

Red heart sprinkles or candies

Green cupcake liners

Optional: edible glitter or sanding sugar for sparkle

Instructions

Preheat oven to 350°F (175°C). Line a muffin pan with green cupcake liners.

In a large bowl, mix cake mix, eggs, oil, water, and mint/vanilla extract. Add green food coloring until it reaches that classic Grinchy hue.

Fill liners 2/3 full and bake for 18–20 minutes. Let cool completely.

For the frosting, beat butter until fluffy. Gradually add powdered sugar, vanilla, and cream, beating until smooth. Tint red with food coloring.

Pipe frosting in swirls on cooled cupcakes.

Top each with a red candy heart and a dash of sparkle, if using.
