Coffee Cake Muffins with Crumble Magic

Delicious and easy-to-make coffee cake muffins topped with a crunchy crumble, perfect for any time of the day.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by greasing it or using muffin liners.
  3. Whisk together the flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  4. Cream together the softened butter and brown sugar until light and fluffy.
  5. Add the eggs, sour cream, and vanilla extract to the butter mixture, and beat until smooth.
  6. Combine the wet and dry ingredients by gradually adding the dry mixture to the wet.
  7. Fold in the nuts, if using.
  8. Spoon the batter into your prepared muffin tin.
  9. Make the crumble topping and sprinkle it on top of each muffin.
  10. Bake for about 18-22 minutes or until golden brown.
  11. Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack.
