Copycat Panera Green Goddess Cobb Salad

A refreshing and vibrant salad featuring mixed greens, chicken, crispy bacon, creamy avocado, and a luscious Green Goddess dressing.

  • 2 boneless, skinless chicken breasts or thighs (or rotisserie chicken)
  • 4 slices crispy bacon (or turkey/plant-based bacon)
  • 1 ripe avocado, sliced
  • 2 hard-boiled eggs, quartered
  • 1 cup Green Goddess dressing (made with fresh herbs)
  • 6 cups mixed greens (baby spinach, arugula, or lettuce)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced

Instructions

  1. Prep the chicken by seasoning with salt, pepper, and herbs. Cook in a skillet with olive oil over medium heat for 6-7 minutes on each side until golden brown or shred rotisserie chicken.
  2. Cook the bacon in the same skillet until crispy, then drain on paper towels.
  3. Hard-Boil the eggs by boiling them for 9-12 minutes, then cool in cold water before peeling.
  4. Make the Green Goddess dressing by blending fresh herbs, garlic, lemon juice, mayonnaise, sour cream, and water until smooth.
  5. Chop the cherry tomatoes and cucumber, then cut the hard-boiled eggs.
  6. Assemble the salad with mixed greens, chicken, bacon, avocado, eggs, tomatoes, and cucumber. Drizzle with dressing.
  7. Finish with seeds or nuts on top and serve with fresh herbs for garnish.
