  • 1 pound Chicken Breasts
  • 1 cup Cottage Cheese
  • 1 cup Marinara Sauce
  • 1/2 cup Parmesan Cheese, grated
  • 1 tablespoon Italian Seasoning
  • Salt and Pepper, to taste
  • 1 tablespoon Olive Oil
  • Fresh Basil, for garnish

Instructions

  1. Pound the chicken: Place the chicken breasts between plastic wrap and gently pound them to an even thickness.
  2. Season both sides of the chicken with salt, pepper, and Italian seasoning.
  3. Heat the olive oil in a skillet over medium-high heat.
  4. Sear the chicken for 5-6 minutes on each side until golden brown and cooked through.
  5. Place the cooked chicken on a plate, top with marinara sauce, cottage cheese, and Parmesan.
  6. Bake under the broiler for a couple of minutes until cheese is bubbly and golden.
  7. Prepare bowls with pasta or rice, place the chicken on top, drizzle with marinara, and sprinkle with fresh basil.
