  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning

Instructions

  1. Prep your ingredients: Ensure chicken is thawed and pat dry. Season with salt, pepper, and Cajun seasoning.
  2. Heat a large skillet over medium-high heat and add olive oil. Sear chicken for about 5-6 minutes each side until golden.
  3. Transfer the chicken to a plate and let it rest, covered with foil.
  4. Sauté the rice in the same skillet for 1-2 minutes until lightly toasted.
  5. Add chicken broth and bring to a gentle simmer. Cover and cook for 15-18 minutes.
  6. Create the creamy sauce by whisking together heavy cream, remaining Cajun seasoning, and a pinch of salt and pepper.
  7. Combine the rice mixture with the creamy sauce and return the rested chicken to the skillet, stirring until coated.
  8. Garnish with chopped green onions before serving.
