2 cups cooked, shredded or sliced chicken

8 oz short pasta (like fusilli, penne, or rotini)

1 tbsp olive oil

2 garlic cloves, minced

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp ground coriander

1/4 tsp turmeric

Pinch of cinnamon

2 cups baby spinach

3/4 cup heavy cream or half & half

1/4 cup grated Parmesan (optional)

Juice of 1/2 lemon

Salt & pepper, to taste

Instructions

Cook pasta according to package directions. Reserve 1/4 cup pasta water and drain.

In a skillet, heat olive oil over medium. Add garlic and all spices. Cook for 30 seconds until fragrant.

Stir in cream and bring to a gentle simmer. Add Parmesan if using, then season with salt and pepper.

Add spinach and stir until wilted.

Mix in cooked chicken and pasta. Toss to coat, using reserved pasta water to loosen sauce if needed.

Finish with lemon juice and serve warm.
