Creamy Coconut Lime Chicken

This dish was a surprise hit one summer evening—tangy, creamy, and just a little sweet, it brought a tropical twist to our usual chicken routine. With zesty lime and rich coconut milk, it’s the kind of dinner that feels both comforting and refreshing. Serve it with rice or veggies and enjoy the flavor escape.

Ingredients

2 lbs boneless, skinless chicken breasts (about 4)

¼ cup all-purpose flour

Salt and pepper, to taste

2 tbsp coconut oil

1 tbsp olive oil

1 garlic clove, minced

1 cup coconut milk

⅔ cup chicken broth

1 tbsp brown sugar (or coconut sugar)

Juice and zest of 2 limes

¼ cup chopped cilantro (plus more for garnish)

1 green onion, chopped (for garnish)

Instructions

Prep Chicken: Pat chicken dry and season with salt and pepper. Lightly coat with flour.

Sear: In a large skillet, heat coconut and olive oil over medium heat. Add chicken and cook 4–5 minutes per side until golden and just cooked through. Remove and set aside.

Make Sauce: In the same pan, add garlic and sauté briefly. Stir in coconut milk, chicken broth, brown sugar, lime juice, and zest. Simmer 5–7 minutes until slightly thickened.

Combine: Return chicken to skillet. Add chopped cilantro. Simmer a few more minutes until heated through.

Garnish & Serve: Top with green onion and extra cilantro. Serve with rice, quinoa, or steamed vegetables.
