Creamy Garlic Cheesy Chicken and Potatoes

A delightful dish of crispy chicken and tender potatoes enveloped in a luscious garlic cream sauce topped with gooey cheese.

  • 2 Chicken Breasts
  • 4 Medium Potatoes, diced
  • 1 Cup Heavy Cream
  • 1 Cup Shredded Cheese (Cheddar or Mozzarella)
  • 4 Cloves Garlic, minced
  • 2 Tablespoons Olive Oil
  • Salt and Pepper to taste
  • Fresh Parsley for garnish (optional)

Instructions

  1. Prep the chicken and potatoes: Wash and dice the potatoes into bite-sized cubes. Season the chicken breasts with salt and pepper.
  2. Sauté the chicken: Heat olive oil in a skillet and cook the chicken breasts for 6-7 minutes on each side until golden brown.
  3. Rest the chicken: Transfer the cooked chicken to a plate to let it rest.
  4. Sauté the garlic and potatoes: In the same skillet, add more olive oil if needed, then toss in the diced potatoes for 5-6 minutes. Add minced garlic and cook for another minute.
  5. Pour in the heavy cream: Lower the heat and stir in the heavy cream, incorporating bits from the pan.
  6. Add the cheese: Mix in shredded cheese until melted. Adjust seasoning as desired.
  7. Return the chicken: Slice the rested chicken and nestle it back into the cream sauce, simmer for 5 minutes.
  8. Finish your dish: If the sauce is thick, add a splash of chicken broth or water for desired consistency.

Notes

For a lighter version, substitute heavy cream with half-and-half or almond milk. Add red pepper flakes for a spicy kick.
