Creamy Gnocchi with Spinach and Feta

A delightful creamy gnocchi dish with fresh spinach and tangy feta, perfect for weeknight meals or special occasions.

  • 1 package of gnocchi
  • 1 tablespoon olive oil
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook the gnocchi: Bring a large pot of salted water to a gentle boil. Add the gnocchi and cook them according to the package instructions, usually about 2-3 minutes, or until they float to the top. Use a slotted spoon to remove them and set aside.
  2. Sauté the spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Toss in the fresh spinach, stirring just until it wilts.
  3. Add the cream: Lower the heat and pour in the heavy cream. Stir it into the garlic and spinach mixture. Let it simmer for about 2-3 minutes, allowing the cream to thicken slightly.
  4. Combine gnocchi and feta: Gently add the cooked gnocchi to the creamy spinach mixture. Fold everything together carefully. Add the crumbled feta cheese and stir to combine, seasoning with salt and pepper as needed.
  5. Allow everything to meld on low heat for another minute before serving.

Notes

For an extra burst of flavor, add a squeeze of lemon juice right before serving.
