Creamy Italian Sausage & Spinach Soup with Ditalini : Cozy, One-Pot Comfort

This creamy Italian sausage and spinach soup is hearty, comforting, and full of rich, savory flavor. Made with tender ditalini pasta, fresh vegetables, and a swirl of cream and Parmesan, it’s a cozy one-pot meal that comes together easily for any night of the week. 1 lb Italian sausage (pork, turkey, or chicken)

1 tablespoon olive oil

1 small onion, diced

3 garlic cloves, minced

2 medium carrots, sliced

2 celery stalks, chopped

4 cups chicken broth

1 cup ditalini pasta

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

2 cups fresh spinach, chopped

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

In a large pot, heat olive oil over medium heat. Add sausage and cook until browned. Remove excess grease if needed.

Stir in onion, garlic, carrots, and celery. Cook for 5–6 minutes until veggies are softened.

Add chicken broth, oregano, basil, and uncooked ditalini pasta. Bring to a boil, then reduce heat and simmer for 10–12 minutes, or until pasta is tender.

Lower the heat and stir in heavy cream and Parmesan until melted and creamy.

Fold in chopped spinach and cook for 1–2 minutes until wilted.

Taste and adjust salt and pepper.

Serve hot, garnished with fresh parsley and extra Parmesan if desired.
