Creamy One-Pot Chicken Pasta

A comforting one-pot dish featuring tender chicken, al dente pasta, and a luscious creamy sauce, perfect for busy weeknights.

  • 1 pound (450g) boneless, skinless chicken breasts, trimmed
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 medium yellow onion, finely chopped
  • 4 cups (960ml) low sodium chicken broth
  • 1 cup (240ml) heavy cream
  • 8 ounces (225g) uncooked pasta (penne, rigatoni, shells, or fusilli)
  • 3/4 cup (75g) grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prep your ingredients: Start by trimming your chicken breasts and cutting them into bite-sized pieces. Finely chop your onion and mince your garlic.
  2. Sauté the chicken: Heat the olive oil in a large pot over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes.
  3. Add the aromatics: Toss in your chopped onion and minced garlic, and sauté for another 2-3 minutes until fragrant.
  4. Pour in the broth: Add the chicken broth, bringing it to a gentle simmer while scraping up any bits from the bottom of the pot.
  5. Add the pasta: Stir in uncooked pasta and let it simmer, uncovered, for about 10-12 minutes until al dente.
  6. Reduce the heat and pour in the cream: Stir gently until combined and the sauce thickens slightly.
  7. Finishing touch with Parmesan: Stir in the grated Parmesan cheese until melted. Adjust seasoning with salt and pepper.
  8. Garnish and serve: Top with freshly chopped parsley and serve warm.

Notes

For a lighter option, swap the heavy cream for half-and-half or Greek yogurt. Add sun-dried tomatoes or spinach for extra flavor.
