Creamy Tomato Garlic Pasta

  • 200g Pasta (spaghetti or fettuccine)
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • 1 can (400g) Diced Tomatoes
  • 1 cup Heavy Cream
  • 1 teaspoon Italian Seasoning
  • Salt and Pepper to taste
  • Fresh Basil for garnish
  • Grated Parmesan Cheese (optional)

Instructions

  1. Boil Your Pasta: Fill a large pot with salted water and bring it to a rolling boil. Add in your pasta and cook according to the package instructions until al dente. Reserve a cup of the starchy cooking water, then drain the pasta and set aside.
  2. Sauté the Garlic: In a large skillet, heat your olive oil over medium heat. Once it shimmers, add the minced garlic. Sauté for about 1-2 minutes until fragrant and golden, being careful not to let it burn.
  3. Add the Tomatoes: Pour in the can of diced tomatoes (with juices). Let it simmer for about 5-7 minutes, crushing the tomatoes slightly for a creamier texture. Season with a pinch of salt and toss in the Italian seasoning.
  4. Cream It Up: Pour in the heavy cream, stirring well to combine. Let it gently simmer for another 3-5 minutes. If it’s too thick, add a splash of the reserved pasta water.
  5. Combine Pasta and Sauce: Add your cooked pasta directly into the skillet with the creamy tomato mix. Toss everything together until the pasta is well-coated. Add more reserved pasta water if it looks too dry.
  6. Serve It Up: Spoon the pasta into bowls or plates. Add fresh basil for garnish and sprinkle with grated Parmesan if desired.

Notes

For a heartier meal, consider adding protein like grilled chicken or shrimp. You can also try different herbs or use coconut cream for a dairy-free option.
