Creamy Tomato Pasta

A comforting creamy tomato pasta that’s perfect for busy weeknights or elegant gatherings.

  • 8 ounces uncooked pasta (penne or fusilli)
  • 2 tablespoons butter (or olive oil for dairy-free)
  • 23 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 (14 ounce) can tomato sauce
  • 3/4 cup heavy/whipping cream (or half-and-half)
  • 1/4 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for serving

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the uncooked pasta and cook according to the package instructions until al dente.
  2. Chef’s Note: Reserve about 1/2 cup of pasta water before draining.
  3. Sauté the garlic: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add tomato paste: Stir in the tomato paste and cook for an additional minute.
  5. Stir in tomato sauce: Pour in the tomato sauce, and stir to combine.
  6. Pour in heavy cream: Slowly add the heavy cream, stirring continuously until well blended. Let simmer for about 3-4 minutes.
  7. Season the sauce: Sprinkle in the Italian seasoning and season with salt and pepper to taste.
  8. Toss with pasta: Add your drained pasta to the sauce and toss gently to coat.
  9. Serve immediately topped with freshly grated Parmesan cheese.

Notes

For added flavor, consider stirring in some sautéed vegetables or protein. Adjust seasonings to your preference.
