1 medium sweet potato, diced
1 tbsp olive oil
1 tbsp pure maple syrup
Pinch of cinnamon & salt
4 slices bacon, cooked and crumbled
1 cup plain Greek yogurt
1 tbsp maple syrup (for drizzling)
Optional: toasted pecans, chopped scallions, or red pepper flakes
Preheat oven to 400°F (200°C). Toss sweet potato with olive oil, maple syrup, cinnamon, and salt. Roast 20–25 mins until golden and tender.
