These Crispy Sweet Potato Bites are golden little flavor bombs—crunchy on the outside, creamy on the inside, and topped with melted Gruyère and a kiss of honey. Herb-seasoned and oven-roasted to perfection, they strike the perfect balance between sweet, savory, and downright addictive. Ideal as a holiday side or an elegant appetizer.

2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
• 3 tbsp olive oil
• 1 tsp garlic powder
• 1 tsp dried thyme
• 1/2 tsp smoked paprika
• Salt & pepper, to taste
• 1 cup shredded Gruyère cheese
• 2 tbsp honey (or sugar-free honey alternative)
• Optional: chopped fresh parsley or chives, for garnish

Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment.

Season sweet potatoes: Toss rounds with olive oil, garlic powder, thyme, paprika, salt, and pepper.

Roast: Arrange in a single layer and roast for 20–25 mins, flipping halfway, until crispy and golden at the edges.

Add cheese: Sprinkle Gruyère on each round and return to oven for 3–4 mins until melty and bubbly.

Finish: Drizzle with honey while warm and garnish with fresh herbs.
