1 lb ground turkey
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 bell pepper, chopped
1 (15 oz) can pumpkin purée
1 (14.5 oz) can diced tomatoes
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can kidney beans, drained and rinsed
1 cup chicken broth
1 tbsp chili powder
1 tsp cumin
½ tsp cinnamon
1 tbsp unsweetened cocoa powder
Salt & pepper to taste
Shredded cheddar cheese (for topping)
In a skillet, heat olive oil and sauté onion, garlic, and bell pepper until softened. Add ground turkey and cook until browned.
Transfer to the crockpot. Add pumpkin purée, tomatoes, beans, broth, and all spices including cocoa and cinnamon. Stir well.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
Taste and adjust seasoning. Serve hot, topped with shredded cheddar.
