  • 1 tsp taco seasoning
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup sweet corn, drained
  • 1 avocado, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • Tortilla chips (optional)

Instructions

  1. Sauté the ground beef in a large skillet over medium heat, breaking it up until browned, about 5-7 minutes.
  2. Season the meat with taco seasoning and a splash of water, stirring to combine, and simmer for a few minutes.
  3. Prepare a large mixing bowl with chopped romaine lettuce, halved cherry tomatoes, drained corn, and diced avocado.
  4. Combine the cooked beef with the salad ingredients and gently toss.
  5. Dress the salad with salsa and dollops of sour cream, then sprinkle with shredded cheese.
  6. Add tortilla chips for crunch, tossing gently.
