Easy Chinese Beef and Broccoli

A quick and delicious stir-fry featuring tender beef and vibrant broccoli in a savory sauce, perfect for family dinners.

  • 1 pound flank steak or sirloin beef, thinly sliced against the grain
  • 4 cups broccoli florets (about 360g), cut into bite-sized pieces
  • 1/3 cup soy sauce (low-sodium preferred)
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar (light brown preferred)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons cornstarch
  • 1/2 cup beef broth or water
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil (canola or grapeseed)

Instructions

  1. Prep the Beef: Start by slicing your flank steak or sirloin against the grain into thin strips, about 1/4 inch thick. Place the beef in the freezer for about 30 minutes for easier slicing.
  2. Marinate the Beef: In a medium bowl, combine the soy sauce, oyster sauce, brown sugar, minced garlic, grated ginger, and one teaspoon of cornstarch. Add your sliced beef to this mixture, ensuring every piece is coated. Let it marinate for at least 15 minutes.
  3. Blanch the Broccoli: While the beef is marinating, bring a pot of water to a boil and blanch your broccoli florets for about 2 minutes until they are bright green. Transfer them to an ice bath.
  4. Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until it shimmers.
  5. Stir-Fry the Beef: Remove the beef from the marinade and add it to your hot pan. Cook for about 2-3 minutes until browned.
  6. Add the Sauce: Pour the remaining marinade into the pan and add the beef broth. Stir to combine, and bring to a gentle boil.
  7. Combine with Broccoli: Add the blanched broccoli to the pan and toss everything together.
  8. Finish Off the Sauce: Mix the remaining cornstarch with a tablespoon of water to create a slurry, and add this to the pan.
  9. Garnish and Serve: Drizzle some sesame oil over the top and serve hot over rice or noodles.
