Easy Chicken Noodle Soup

A comforting bowl of homemade chicken noodle soup, perfect for chilly evenings.

  • 4 cups chicken stock
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prep your ingredients by washing and chopping your veggies: peel and slice your carrots, dice your celery, chop your onion, and mince your garlic.
  2. Sauté the aromatics in a large pot with olive oil over medium heat until the onion is translucent—about 3-4 minutes.
  3. Add the vegetables, stirring in the carrots and celery. Sauté for about 5-7 minutes until they start to soften.
  4. Pour in the chicken stock, stirring to combine, and allow it to come to a gentle simmer.
  5. Add the egg noodles and let everything simmer for about 8-10 minutes or until the noodles are tender.
  6. Incorporate the shredded chicken, stirring and heating through for about 2-3 minutes.
  7. Season with salt and freshly cracked pepper to taste.
  8. Garnish with freshly chopped parsley and serve in warm bowls alongside crusty bread.

Notes

This soup can be customized with additional herbs or spices. Great for freezing; just add fresh noodles when reheating.
