Ingredients

  • 1 can Canned Chickpeas (Garbanzo Beans)
  • 1 Cucumber, chopped
  • 1 cup Cherry Tomatoes, halved
  • 1 Red Onion, diced
  • 1 cup Feta Cheese, crumbled
  • 1/2 cup Kalamata Olives
  • 1/4 cup Fresh Parsley, chopped
  • 1/4 cup Extra Virgin Olive Oil
  • Juice of 1 Lemon
  • Salt and Pepper to taste

Instructions

  1. Rinse and drain chickpeas under cold water, then set aside.
  2. Chop the cucumber, cherry tomatoes, and red onion as described.
  3. Mix all the chopped ingredients, olives, and feta in a large bowl.
  4. Whisk olive oil, lemon juice, salt, and pepper in a small bowl.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Taste the salad and adjust seasoning as needed before serving.
