Easy No-Bake Peanut Butter Oat Cups

A delightful no-bake snack made with creamy peanut butter, oats, and a touch of chocolate, perfect for on-the-go munching.

  • 1 cup old-fashioned oats
  • 1/2 cup natural creamy peanut butter
  • 1/4 cup honey (or maple syrup for a vegan option)
  • 1/4 cup chocolate chips
  • 1/4 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Mix the dry ingredients in a large mixing bowl: combine the oats and a pinch of salt.
  2. Combine the wet ingredients in another bowl: whisk together the peanut butter, honey (or maple syrup), and vanilla extract.
  3. Pour the peanut butter mixture into the bowl with the oats and fold gently to coat.
  4. Add the chocolate chips and fold them into the mixture.
  5. Fill a muffin tin lined with cupcake liners, pressing the mixture firmly into each cup.
  6. Chill in the fridge for 30 minutes to 1 hour to firm up.
  7. Serve by popping the cups out and optionally drizzling with melted chocolate.
