Egg Roll in a Bowl

A quick and healthy take on the traditional egg roll, packed with flavor and nostalgia.

Ingredients

  • 1 lb ground pork or chicken
  • 1 package (14 oz) coleslaw mix
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tsp ground ginger
  • Salt and pepper to taste
  • Optional toppings: sesame seeds, Sriracha, chopped cilantro

Instructions

  1. In a large skillet or wok over medium-high heat, add your ground pork or chicken. Cook for about 5-7 minutes.
  2. Add the minced garlic and sliced green onions, cooking for about 1 minute until fragrant.
  3. Stir in the coleslaw mix and stir-fry for about 3-5 minutes until wilted.
  4. Sprinkle in the ground ginger and drizzle in the soy sauce. Sauté for a couple more minutes.
  5. Drizzle the sesame oil over the mixture and stir well.
  6. Plate your Egg Roll in a Bowl and sprinkle with optional toppings.
