Egg Roll in a Bowl

A quick and easy twist on traditional egg rolls, this one-pot dish is packed with flavor and can be customized to fit any dietary need.

Ingredients

  • 1 lb ground beef or pork (or turkey or chicken)
  • 1 tbsp toasted sesame oil
  • 0.5 cup onion (diced)
  • 1 tbsp fresh ginger (minced)
  • 3 cloves garlic (minced)
  • 14 oz coleslaw mix (bagged cabbage and carrots)
  • 0.25 cup soy sauce (or tamari for gluten-free)
  • 1 tbsp sriracha (optional)
  • 2 stalks green onions (sliced)

Instructions

  1. Sauté the meat in a skillet over medium-high heat with sesame oil until browned, about 5-7 minutes.
  2. Add the diced onions and let them sweat for about 2 minutes until translucent, then stir in minced garlic and ginger for about another minute.
  3. Incorporate coleslaw mix and cook for 5 minutes until slightly wilted but still crunchy.
  4. Pour in soy sauce and sriracha, mix together, and cook for another couple of minutes.
  5. Garnish with sliced green onions before serving.

Notes

This dish can be made ahead and reheated. It’s also freezer-friendly for up to 3 months. Feel free to customize with your favorite vegetables.
